My MacBook Air M3 won't run two external monitors with the lid open.+

That is a known limitation of the M3 Air: it supports two external displays only when the laptop lid is CLOSED (clamshell mode); with the lid open it drives just one external monitor plus the built-in screen. So to use two externals, close the lid and use an external keyboard/mouse. It is by design for the M3 chip, not a fault or a cable problem. Later chips relaxed this.
