How do I scan or copy on my Epson SureColor P700?+

You can't — the SureColor P700 is a dedicated professional PHOTO printer and is print-only, with no scanner or copier. So there is nothing to troubleshoot for scanning/copying. For its actual purpose — high-end photo and fine-art prints — the keys are genuine Epson pigment inks, the right photo/fine-art paper, the matching media setting and ICC profile, and a clear printhead (run a nozzle check/clean if a channel drops out).
